Since I've been craving yummy stuff. I decided to make something good this morning. So I decided to get the fantastic tenderloin cut that I got last night (Aka, fillet Mignon) and decide to make it into Shawirma ... And Oh BOY!
So I sliced the thick cut really finely (hearing the gods of steak screaming in protest from their place in heaven for the atrocity I'm committing) this cut should be handled like a fragile princess, and here I am slashing it
Anyway, because I like my meat to be done well. (not really well done, but medium to well), so I had to slice it finely and here my "Wolfgang Puck" chef's knife came in really handy. It went through that tender meat like it was a hot knife through butter.
So thin slices, then I marinated it with freshly squeezed lemon juice, some kosher salt, pepper and half a Jalapeno diced finely (again thanks to my Wolfgang Puck knife).
I rubbed everything together to infuse the meet with the flavor from the yummy ingredients. And sprinkled a few chives on top.
I heated the skillet a bit and placed the meat which was sizzling at this point. flipped a little bit, added some water to it.. and allowed it to cook to a yummy brown color, drying all it's juices and water while remaining juice and tender on the inside
Rolled it in sandwich, with some tomato slices and some lattice.. And Karam's garlic sauce ...
I swear I was in heaven after the first bite... The gods of steak were pleased with the result :)
This was by far the most expensive shawirma sandwich I have ever had in my whole life, the cost of the meat alone was $24 (and this is home made). Just to compare, a burger pattie costs less than $1. A full burger at McDonald (with everything and add to that profit is 99c!). And this cut of meat was $24. That's 2400% more expensive than burger.
It was well worth it and really, this is not the last time to do this!

I would have added a little bit of oil to the marinate and just a hint of cardamom (Hal or Hale)..it makes a great difference with the shawermah recipe...try it next time.

Yeah, well the Spices will add flavor to the crappy meat that is usually used in shawirma. This cut, doesn't even need spice :)
