You're right, design stems from requirements, and feedback. But you'll find two people tasked with designing the same thing. One guy does it for a living, and one guy does it because he loves that product.
And you're right again, the QA team needs to test with an open mind and empathy for the customer. But the burden of designing a tool lies primarily on the designer. Everyone else, are tools to his success (or demise)

I won't fault you. I think in the past decade Mac has demonstrated and proven that it can make products that appeal and cater for the needs of everyone. As you said, they do have their shortcomings but they don't leave a lot to be wished for. They're Nazis when it comes to their platforms, phones and devices. They don't share, they don't play nice with competitors. But it's a cut-throat system. They're expected to do whatever is necessary.
And I agree with you, Apple (And Google) both show that in many cases they're passionate about the design and technology. Now there's nothing wrong with making money while doing that. That's where these major companies priorities should be. Make money, but keep your focus on the design and technologies. A good design will eventually make money due to it's success.
but of course knowing you, I am sure you have a gazillion backups of all your contacts, SMSes sent and received and chat logs, photos, and the most up to date geo location, so I shouldn't feel so bad for you :P
