From Scratch: Dawali (War2 3inab) rolled vine leaves

    Last week, I conquered my Everest, cooking Koosa. I got so many requests (and wishes) to actually try and conquer my "other" Everest. This time it's the much harder Dawali ...

    The best dawali I ever had in my life was done by my sister Samar. She has out done even our mother in stuffed grape leaves.

    Tonight, I've set the bar even higher as I made the best, and I mean THE BEST dawali I've EVER tasted in my whole life!

    And I'm not kidding, or exaggerating

    Alright, so I decided to actually go ahead and spend hours rolling the dawali. My thoughts? Too much work!

    It took me a over two hours to roll around 2 pounds of grape leaves. It was so tiring that I couldn't finish the whole thing in one go. Nevertheless, I was ale to finish rolling.

    After putting all in the pot, I discovered that I need a bigger pot! (Big mistake by the way, this causes the rolls to unwrap). The "upgraded" pot worked well. It was enough.

    I made the same mistake again when I was turning the pot upside down to a serving plate. I had to put it all back and turn it upside down once again into a serving tray. It caused few stuffed leaves to break.

    Nevertheless, the taste was phenomenal, completely out of this world. I am, honestly, not exaggerating or anything. I think the flavour to effort ratio is extremely high. This is a difficult dish to make, but the result was rewarding in my case. Your mileage may vary.

    The yummy stuff added to the pot, the lam shoulder chops, the potatoes, and the tomatoes ALL tastes out of this world. I'm sure they added so much to the overall flavour.

    Now, if someone could suggest to me anything to do with the remaining broth!? It tastes AMAZING but I don't know what to do with it!

    i don't know what broth is, and anyway i don't think i will be able to help :D
    Q, this will remain my forever everest! i am just lousy with arabc food sometimes.. i do the best mansaf after mom's but still, some arabic foods, i just cant master.. so sa7tein awalan w it looks gr8 taniyan, w num num ana jo3et talitan lol!

    Well done Q. Now that u've seen the time and effort that it takes to make them, u'll appreciate ur mother much more!
    I learned how to roll them, and I once did it for my family, but it's so time consuming! Especially if u're making it for a large number of people. But I guess in the end it's worth it. Definitely one of my favorite meals :) Good job!

    oh, boy, u did it again...sa7teeen...
    samer, effort for two hours??? come and help me when i make like 7-8 lbs of them, one day to roll aned another day to cook....
    as for the remaining broth, i guess if u need to freeze some of it, u cna always use the broth to heat it up, or u can simply add some round beef and alittle of short grain rice (egyptian rice), and let it cook and here u have rice soup....i remember mom used to make us this soup from the left over of chicken broth...but u can try with lamb/vine broth...but the thing is it is greenish...and fatty in a way!!!

    Broth is the Mara2a that is left after you're done cooking. There's nothing left :) It was sooooooooo yummy to the point that I drank it all :)

    I always appreciated my mother's efforts wallahi. She used to do all of this stuff for us and still managed to find time for her full time job. Allah ya3teeha el 3afyeh
    You're right, it's so time consuming, rolling it that is. But cooking it is easy. The result was totally worth it

    OH MY GOD 7 or 8 pounds!! That would take FOREVER! Allah ya3teeki el 3afyeh.
    The broth was out of this world afaf. It was soooooo yummy that after tasting it, I just couldn't stop myself
    You're right, it was fatty. So what I did was leave it to completely cool down then I split the whole broth from the fat. It was 100% fat free *(unless there was soluble fat that I'm not aware of)

    It's not like somoene is not doing their job, they are, but maybe it will need time. I don't think if this guy was the son of Qaddora it would have made any difference. I feel that everyone is doing whatever they can do

    sa7teeen dear, and usually i would simply bring a pita bread and a3'ammess the broth...it is so tasty...out of this world as u say and a meal by itself, Q...
    ah, el broth for kabseh thats obvious, and i will put that on my list its true by the way, ur first trial is out of this world, i tried seneyyet la7me, and magloobeh betienjan, out of this world, second trial? khabsa! i also did manageesh beid :p now THAT is something i gotta spend few trials on
